I loved Goulash as a kid. As an adult, I could never find a recipe that quite tasted like the one my mom always made so I set out on an adventure to create my own.
Total success, it tastes just like the one my mom made when I was a kid – delicious! Enjoy!
Ingredients
- 1 lb. ground beef
- 3 garlic cloves, minced
- 1 cup Pacific low-sodium beef broth
- 1 (15 oz) can Muir Glen fire roasted diced tomatoes
- 1 1/2 cups Cascadian Farms frozen corn
- 1/2 teaspoon thyme
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon rosemary
- 1/4 teaspoon oregano
- Dash of sea salt and course black pepper
- 1 (6 oz) box Annie's organic macaroni and cheese
Instructions
- Cook the macaroni according to package directions.
- In a medium-size pot over medium-high heat, brown the ground beef; drain excess fat.
- Add in the minced garlic and saute for 1-2 minutes.
- Add in the beef broth, fire roasted tomatoes, corn, garbanzo beans and spices. Cook until warmed through.
- Add in the finished macaroni and cheese and stir well.
- Top with shredded mozzarella cheese, salt & pepper.
- Serve & Enjoy!
