Conversation at our house on Saturday morning.
Husband – “I’m hungry … there’s nothing to eat in this house!”
Me [thinking] – Really? We just got back from the farmer’s market. Grab a radish and stop complaining.
Me – “Take the dog for a walk and I’ll whip up something for breakfast.”
I left the kitchen and headed towards my office to flip through my recipe book when all of a sudden I hear a loud pounding noise. “What in the world,” I said out loud. I walked out to the kitchen to find my husband slamming a frozen bag of hashbrowns against the counter.
Me – “What in the world are you doing?”
Husband [while continuing to slam the bag of hashbrowns on the counter] – “It’s frozen, I am trying to break it apart …”
Me [thinking] – No duh – they were in the freezer.
I was just about to tell him to stop what he was doing, when the bag split open and frozen potatoes go flying around the kitchen.
Me – “Now look at this mess … I said I would make you breakfast! Get out of here and let me clean this up!”
Husband – “I was just trying to help …”
Me [thinking] – I shouldn’t have yelled like that … ugh! Now I have to make a really good breakfast to make it up to him.
Okay, time to settle down, vacuum the kitchen again this morning (at this point it was only 8:30 am) and make an I’m sorry for screaming at you for doing something stupid breakfast.
So here you go … big surprise it’s hashbrown casserole – hey, they were open.
This super simple recipe tastes great with minimal effort.
I hope all of you love it as much as my husband did.
Ingredients
- 1 lb. ground sausage
- 1/2 sweet onion, chopped
- 1 TSP minced garlic
- 1-16 oz. frozen hashbrowns, slightly thawed
- 16 oz. shredded mozzarella cheese; divided
- 1/2 cup grated parmesan cheese
- 1/2 TSP pepper
- 1/2 TSP salt
- 4 eggs
- 1 cup whole milk
Instructions
- Lightly grease a 9x13 baking dish.
- Pour hashbrowns into a large mixing bowl and add in 1 cup of mozzarella cheese and grated parmesan cheese. Stir until well combined; set aside.
- In a large skillet over medium heat, brown sausage, onion and garlic.
- In a medium mixing bowl, whisk together eggs and milk until frothy.
- Transfer sausage mixture to the hash browns and stir until well combined and then transfer mixture to prepared 9x13 baking dish.
- Pour the egg/milk mixture over the top of the hashbrown/sausage mixture.
- Sprinkle remaining mozzarella cheese over the top and bake for 40 minutes.
- Serve and enjoy!
